Meal Planning Featuring Chicken this Week

Chicken is so versatile and it is its versatility that we are featuring in meal planning this week. I’ve been to my local Aldi and chicken has been quite inexpensive so we thought we would use as much as possible. To ensure the family was not bored with chicken we thought we would change the flavour and the methods of preparation as you will see.

We can’t overemphasise the fact that it is always cheaper to buy the whole chicken and cut it into portions that you can use for several dishes. We understand that sometimes you are short on time and so need to buy the portions already prepared and packaged in the supermarkets. But guess what? You are actually paying someone to prepare it for you.

We have not exhausted the range of flavours, right now I can think of some real favourites which we did not even have this week including Katsu curry, Jamaican chicken curry, sweet and sour chicken, chicken enchiladas etc.

I still have a lot of chicken portioned and frozen which we can make use of later in the week. Look out for the post next week too because we are going to let the children have a go at preparing the chicken the way they want it. They are on a break from school so they are looking forward to getting involved in cooking (I hope).

So what did we have this week?

On Sunday we had a traditional British Roast Chicken dinner with broccoli, carrots, stuffing, Yorkshire pudding and gravy. Only half the chicken was cooked because not everyone was going to be home. Even then, we still had quite a bit left over.

On Monday, the leftover chicken made a scrumptious chicken fried rice chock full of healthy vegetables. Chinese 5 spice and soy sauce added the traditional Chinese flavour.

Our meal planning this week featured quite a few chicken dinners and a top video for you to see how to save big on chicken. We are finding it so easy now to take a few minutes to plan the meals for the week ahead and to get only the items we don't have in. IT's really a no-brainer. Pin for later.

Tuesday’s chicken was stewed in a sweet chilli sauce. It was so delectable and was served with spicy rice and steamed vegetables.

 


On Wednesday we took a break from the love affair with chicken. It was hot at dinner time so we went for a pasta salad with cheese instead. It was quite fresh and simple. Simply good. Some of us had a quinoa salad instead (wanting to cut down on the carbs).

Chicken pasta bake was the highlight of Thursday’s meal. Sweet corn and coloured peppers made the dish so appealing and the creamy cheese sauce was to die for.

On Friday, we had a feast of chicken with peri peri sauce as well as homemade buffalo wings with chips.

Here’s hoping you find some inspiration for this week’s meal planning. Try experimenting with flavours to change things up a bit.

As the Summer approach and the evenings get longer, we will be doing a lot of outdoor cooking. We are hoping to feature some Jerk Chicken and chicken and vegetable skewers as we have already made the marinade and it’s sitting in the fridge. Hope you are looking forward to that as much as we are.
