Last week you might have read about how excited I was to find that by defrosting the freezer, we found enough for two weeks’ worth of meals.
This week, however, with it being the start of the Easter holidays, we will make a plan that will cover the meals for two weeks. Some days we will be out but we still plan to make our days out cheaper by packing and taking our lunches with us.
Here are some of the ideas that we have in mind for some child-friendly meals that don’t cost too much. You will notice that a lot of the meals make use of some of the same ingredients. This is one of the benefits of the meal planning. So when we do the grocery shopping, we won’t have to buy lots of ingredients that will only be used once. That way, we cut down on the excessive food waste.
Pizza and calzone
Homemade bread and focaccia
Jerk chicken (If the weather permits, we can do it on the barbecue outside).
Spaghetti Bolognese
Jacket Potatoes with bolognese and other toppings
Takeaway style oven fried chicken
Soup with homemade bread
For some of the days out, the kids will also prepare their own fillings including:
Cornbeef with pepper, mayonnaise and onions
Tuna and sweetcorn
Egg and cress
Of course, they will have the usual McDonald or KFC treat some days.
So there you have it. There will be some planning and shopping and then be cooking but we will also enjoy exploring new foods and places. We usually try out at least one new recipe each half term but we still have yet to choose the one for next week. Just watch this space.
