What we have Loved in February

February has been touted as the month of love. On February 14th many choose to celebrate Valentines’ Day and to treat their loved ones well. We did too. But unlike many other years, this year 2021, the year of the continuing pandemic, we sought out things to celebrate. Thanks to God we are still alive and well and so that was perhaps the biggest thing really that we had to celebrate.

Anniversary Celebrations

February marked the month that we fostered our youngest daughter, and this year marked the 10th year that she has been a part of our family so there was definitely cause for a celebration, and so we did. We had a party, at home with all 5 of us complete with party nibbles and drinks and games.

We reminisced about days gone by and all the fun we’ve had together as a family. We had some gut-busting hilarious moments and looked back at some photos of our time spent together. The absolute favourite photo I will share with you. It was her first trip to Jamaica on holiday, her first time abroad, her first time having a holiday anywhere!

Well, she was so excited about the trip that she could not sleep. Well, when we got to the airport as soon as she sat down she was knocked out cold and fell asleep with her head tilted and her mouth wide open! Such laughs! Seriously, we’ve been so blessed to have her in our family and we would have it no other way. It’s as if she has been with us forever! She herself also surprised us by presenting us each with a gift. It was honestly so lovely.

Valentines Shenanigans 

In our household, we have always celebrated Valentine’s Day and have always given gifts, cards and shared a special meal. Well, this year was no exception. As the kids are older now, (the youngest is almost 18!) we had to think of creative gifts but being in lockdown, we wanted to minimise hoarding and buying useless gifts. I hope you know what I mean.

Sometimes not much thought goes into buying gifts and as a result, they are often not used. We wanted to be mindful and give meaningful gifts that would actually get used (or eaten). So each goody bag this year included chocolate, sweets, cookies, reed diffusers, heart-shaped candles, and wax melts. They absolutely loved them and they have been used, and eaten. Then in the evening, there was a special meal which we enjoyed together.

Kitchen Makeover

Our eldest daughter came home from university in December with the grand idea that we should change the look of the kitchen and lights. Well, the very idea filled me with dread. I definitely did not want any decorators or electricians in my home at a time like this and I was also thinking about the associated costs. Anyway, she began to send me some Pinterest inspiration photos of grey kitchen cupboards and I was sold!

I myself started to seek out the photos and videos of transformed kitchens. Content that others had done it and so could we, we decided to take on the work ourselves, minus of course, the electrical works. And so we did. Well, we have started. We are documenting the process and the completed works will certainly be shared here once we are finished.

Pancake Day

Pancake day was a strange one this year. The kids love pancakes and Jo and I don’t, however, we try to indulge them and make the American-style pancakes every now and again and particularly on pancake day. We this year, we made the pancakes, and guess what?! They were not eaten. With lockdown, the kids’ schedules are out of whack so they stay up really late at night doing whatever in their rooms, and then in the day when they should be up and about, they are sleeping.

Needless to say, they do not like cold nor reheated pancakes so this year, they were not eaten. So our flour, eggs, milk, and salt were wasted! Such a pity. The one saving grace was that we did get some lovely insta worthy photos. You can’t win ’em all!

Delicious Grapenut Icecream Recipe

We have been thinking about one of our favourite icecreams that we used to have in Jamaica so one day we made it! So many have told us that they’ve used our recipe to make it too! It is really simple and easy to make and doesn’t take any expensive ingredients at all! You don’t even need to have an icecream maker. This video shows how we made it.


Green Juicing and Supplements

Well, as the pandemic is still raging, not only have we got the first dose of the Pfizer jab against the virus, but we have also tried to boost our immune system too.

What do we use? Well, each morning we make and have half a glass of green juice which we make using 5 ingredients. They are celery, green apple, cucumber, lemon juice, and ginger.

We see it as a healthy little shot that sets us up for the day. Apart from the green juice, we have bought some vitamin and mineral supplements that we also add to our arsenal for boosting our immune system. This includes zinc, vitamin D, and vitamin C.

So February 2021 was a good one for us, despite everything. On the work front, we achieved enough and we are grateful for that. Healthwise, we are missing being able to go outside even just for a walk, and also for some content for our Youtube channel.
