Meal planning for Week Beginning March 24

If this is your first time checking out our weekly meal planning posts, you are in for a treat!


With longer days and more time to be outdoors, we are making full use of this. Spending a few minutes in the supermarket to find reduce priced food products is paying off. Even better when we do go to the outdoor market when we can actually see the food products without much packaging, meet and greet with the vendors and haggle for some good deals.


Good deals that will go towards our meal planning this week:

  • We found quite a few good steals, including carrots and ginger in the reduced food (yellow sticker) section in Tesco
  • We will also be using up Aldi’s Super Six produce in our meal plans.
  • When we went to the outdoor (covered) market at Bull Ring in the city centre we got eggplants, limes and tomatoes that we want to use up
  • We will make some amazing dishes using products we already have in our store cupboards

Here are some of the meals we have planned for the week ahead:

Sunday: Chicken roast dinner (using up a small whole chicken we got for just under £2.50, and some of the reduced price carrots with other vegetables

Easy meal planning using up what we have in our cupboards and fridge and also adding a few items from the market or supermarket is the best way to go. Pin.

Monday: Lentil curry with homemade chappatis (using up some of the ginger)

Tuesday: Chicken Fried rice (using the leftover chicken from Sunday’s dinner, along with two eggs and frozen vegetables

Wednesday: Fried eggplants (we have found a way to reduce the water content and then just coat it with a spicy coating we use to fry chicken) This will go with oven chips made from scratch.

Thursday: Macaroni cheese (this will go with red apple and cabbage slaw using up some of the fruit and veg we have)

Friday: Veggie pizza

Saturday: Chicken and vegetable soup with dumplings)

Easy meal planning using up what we have in our cupboards and fridge and also adding a few items from the market or supermarket is the best way to go. Pin.

We almost always have food left over after each meal and that doesn’t go to waste. It is packaged as individual portions and then frozen or refrigerated for another date.

For the soup, we will use mostly the backbones that are full of flavour (after we butcher the chicken and freeze the other portions).

    I am looking forward to an Aldi opening near us soon as so many people have said how good they are. The eggplant sounds lovely

    Sounds delicious!

    I love the reduced fridge and when I’m lucky enough to grab some bits I pop them in the freezer ready to use up.

    It sounds like you have got some great deals!
