Super Moist Carrot Cake Secret Recipe

You know when someone says ‘Can you keep a secret?’ You want to say yes because you want to hear the secret and you promise not to tell anyone! Right? Right!

Well, I have a secret to tell you but you have my permission to share it with whomever you wish. Let’s get straight to it. Come closer. We have discovered, quite by accident how to get the moistest possible carrot cake!

We were in lockdown, the carrots were very cheap and so we got a lot. Well, we kept them in the fridge but because we really had more than we needed for everyday cooking, we had to come up with a strategy to make them last longer. So what we did was to wash them, grate them, bag them and freeze them.

We often make carrot cakes and we noticed that when we used the thawed carrots in the cake, the cake was the moistest cake we have ever had!

What a discovery eh! And it was no fluke because we have tried it again on a number of occasions and now will not go back to making carrot cake without using frozen carrots. The recipe has been highly requested (demanded even!) by those who have tasted the cake.

As a direct result of that bombardment, we think it might be best to let the ‘cat out of the bag’ and just post the recipe here. So here goes.

Super Moist Carrot Cake Secret Recipe 

Ingredients

360g SR flour

250g sugar

250 ml oil

2 tsp baking powder

2 tsp ground cinnamon

3 eggs

440g grated carrots (freeze then thaw before use)

1/2 tsp salt

1 tsp vanilla essence

50 g mixed fruits, pureed (optional)

Creme cheese or vanilla frosting (optional)

 

Method

Preheat the oven to 180 degrees c

Sieve together the flour, baking powder, cinnamon, and salt in a large bowl. Mix in the carrots and mixed fruits.

In another bowl, beat together the oil, eggs, vanilla essence and sugar.

Add the liquid ingredients to the dry ingredients. Combine well. Transfer to 2 greased and lined tins.

Bake for 30 minutes, then reduce the heat by 10 degrees and bake for a further 15 minutes.

Cool, frost as a sandwich, and add topping if desired and enjoy.

We suggest this cake could be made into a celebration cake for a birthday, as a pudding idea or even a treat.

Save some money too by getting your carrots when they are plentiful and therefore cheaper. This means you can grate and freeze what you don’t use right away.

    I have a fridge full of carrots that would probably have ended up in the bin had I not read this. I’d never thought of peeling and freezing carrots! And I’ll have to check your recipe. My daughter wants to make her daughter a carrot cake as it’s his favourite type of cake, so fingers crossed for success…and I’m off to freeze some carrots. x
