Mothering Sunday has been tiring. But I’ve been smart with planning the meals for this week and so I will share them with you below,
Just a background: We have always thought that we should look out for, and treat other mothers on Mothers’ Day. So this year we ‘adopted’ two elderly ladies who have been good to us over the years, ever since we met them upon migrating to England.
You would think we were preparing food for an army on Sunday! But no, we cooked enough to last for the whole week. So we made big batches of several dishes which we served up on Sunday but also dished up and refrigerated the rest for later on in the week. Were we being clever or what?
Here’s our Mothers’ Day Menu that will feature in the meal plan for the rest of the week
Curried Mutton
Jamaican style brown stewed chicken
Rice and peas
Macaroni and cheese
Potato salad
Cucumber and tomato slices
Fried ripe plantains
So everyone had a bit of everything on Mothers’ Day and then the rest was secured for later in the week. We had planned to make the ultimate mothers’ Day cake but we realised on Saturday night when we went to measure out the ingredients for early Sunday, that we didn’t have any bicarbonate of soda (baking soda).
So we quickly made a change of plans and made a lemon mascarpone cake. It was absolutely delicious and luckily we had what we needed to make it.
We are not coffee drinkers but we did get some in to try the coffee and walnut cake recipe. It turned out beautifully and is going to be added to our list of easy, go to cakes to make.

- Saturday: Toasties with cheese, avocado, plantains and tomatoes

I don’t have a cake or dessert recipe using coffee, so instead I’ll tell you how to make Turkish coffee. If you have an ibrik (briki) which is an authentic little metal pot for making Turkish coffee, then use that. Otherwise, use the smallest metal saucepan you have. Into the pot put 1 cup of water and 1 heaped teaspoon of Turkish / Arabic coffee per person. I like Turkish coffee that has cardamom in it, but it’s fine without cardamom. Don’t try to use ground coffee that’s made for French press or filter coffee, as it won’t be fine enough. If you take sugar with your coffee, add it to the pot now, before cooking.
Put the pot on the heat and watch it until it starts to boil. When it starts to boil it will froth up, at which point take it away from the heat for 20 seconds until the froth subsides, then put it back on the heat. Repeat this heating and removal from heat until the coffee no longer froths up. It may take anywhere from 3-6 times of heating and removal from heat until it boils with no more froth. It is then ready. Leave it 30 seconds to let the grounds sink to the bottom of the pot, then serve.

100g unsalted butter, chilled and diced
2 teaspoons instant coffee granulesor powder
1 medium free-range egg
For the buttercream
75g very soft unsalted butter
150g icing sugar
4 teaspoons cocoa powder (optional)
