The Perfect Mothers’ Day Cake With Coffee and Walnut

Have you made your Mothers’ Day plans already? It’s still not too late! According to Tesco, there are still lots that you can do and get to prepare for the big day. Don’t forget these top tips for savvy shoppers to make the most of your money.

You could invite mom over to yours for a brew and a cake. This version of a coffee and walnut cake would be perfect.

The plus is that you have all these ingredients already at home. I am going to show you how to make this in less than an hour or so.

Here's a quick and easy Mothers' Day cake to make or for any other day when you want to make a cake with store cupboard ingredients. Coffee and Walnut, yum!

Ingredients for this Mothers’ Day Coffee and Walnut cake


100g self-raising flour

100g caster sugar

100g unsalted butter

2 large eggs

50g chopped walnuts (other nuts can be substituted)

1 tsp baking powder

1 tbsp instant coffee or 1 tsp coffee essence

If you want to ice/decorate the Mothers’ Day Coffee and Walnut cake you can use:

35 g butter, melted

45 g Nutella or similar chocolate spread

100 g icing sugar

1 tsp milk

1 tsp coffee essence or instant coffee

How to make the coffee and walnut cake for Mothers’ Day

Easy Peasy, no lemon squeezy …

  • Add all the cake ingredients to a mixing bowl and combine well using a wooden spoon.

  • Use a spatula to scrape the mixture evenly into two 18cm sandwich tins OR one loaf tin

  • Bake on the top shelf of the oven: 25 minutes for the sandwich tins and 40 to 50 minutes for the loaf tin

  • Prepare the icing/decoration
  • When the cake is cooked, cool completely and spread icing on top of the cakes or on top of the loaf. Sprinkle with chopped walnuts

 


Well, we didn’t get the chance to decorate the cake the first time around. I suppose you can guess what happened. We will happily do another one soon and decorate it this time.

I would strongly suggest that you give this a go. And Mothers’ Day will be perfect to honour some of our world’s Phenomenal Women.

Exciting update on my Mothers’ Day Coffee and Walnut cake

The cake turned out beautifully so we ravished half of it before we could get any icing done.

But a day later, we got to work again and made the cake for my friend who was visiting with us. Here are some further photos to inspire you.

I just put a bit of the icing onto the plate before placing one of the cakes top side down on it to prevent it from slipping around.

    This cake looks lovely! I like that it isn’t over-frosted. Lovely coffee and walnut cake. I love your blog, by the way – great recipes and beautiful pictures. I love the idea of a kitchen goddess. I would like the use of espresso coffee powder and also the topping sounds wonderful. It’s nice to see some women still enjoy being in the kitchen.
