How to make your own Stuffing mix for Christmas or Sunday Roast

Sure, we are Jamaican by birth so what do we know about how to make your own stuffing mix for Christmas or Sunday roast? Well, we don’t know much, but we have to embrace the cuisine of the country we now live in. And, in any case, our kids actually love to have stuffing balls as part of their Christmas dinner or their Sunday roast.

Fast forward to Week 77 of lockdown and we are going to have a Sunday roast that hopefully, we will all enjoy.

The problem is that we have no packet mix to make the stuffing to go with our roast chicken, rice and peas, Yorkshire puddings. By the way, did you see the Yorkshire puddings we made on Channel 5’s Shop Smart Save Money?

That was the second time as we only made it once to get some practice before filming.

Anyway, back to this stuffing mix. I checked the trusty Google for some recipes for stuffing mix and most of them had sage in it. Who has fresh sage during a lockdown? So I asked around in my Whatsapp group to see if any of my friends actually make their own stuffing mix and could advise me. I got a bit of advice and then a simple little recipe.

That’s all I needed. Just having the basic idea for the recipe was good enough for me. I used the basic recipe and modified it a bit to use what we had in as well as to serve the likes and dislikes of our family members.


Ingredients needed to make your own stuffing mix for Christmas or roast dinner

  • 3 slices of bread, toasted and then grated or chopped roughly
  • 1 onion, finely chopped and softened in 1/2 tsp oil
  • 1 egg
  • 1 heaped tsp dried thyme
  • pinch of salt
  • pinch of pepper

Optional items you could include to make your own stuffing mix

  • 1/2 tsp turmeric
  • 1/2 tsp paprika
  • 1 Tbsp dried fruits, chopped

Method

Add all the ingredients to your mixing bowl and mix well.

Separate the mixture into about 8 equal-sized pieces

Shape each piece into balls in the palm of your hands.

Place on a lightly greased baking tray and bake in a hot oven for 25 minutes.

The mixture can also be used to stuff your chicken or turkey for Christmas or roast dinner

They are absolutely delicious and you can’t say you don’t have the ingredients you need to make your own stuffing from scratch.

It is a satisfying feeling to know that you can make your own stuffing with just a few basic ingredients.
