Sizzling Summer Barbecue Ideas From Joleisa on Shop Smart Save Money

As we said on the show, we love barbecues and as soon as we have enough sunshine, we generally put on sizzling summer barbecue ideas of fresh food, including corn on the cob, jerk chicken, and the most amazing vegetarian burgers.

We have a lot of tips for having an amazing BBQ experience so we will share some of these here as well as the foods/recipes we made for the show, and the photos of the BBQ day and studio day.

Tips for having a sizzling summer barbecue

  • If you are preparing meat, marinate it beforehand to give the flavours a chance to soak in
  • Include as many fresh fruits and vegetables as possible (to still get the micronutrients in the diet)
  • Always check for yellow sticker items in your supermarket as you may be able to pick up reduced price food items
  • When the summer season ends, it’s the perfect time to stock up on coal which you can store in the shed (or other outdoor space)
  • Get as much preparation done as much as possible before the day of the BBQ
  • Take turns with helping to man the BBQ. This makes it fun for everyone and prevents one person from being burnt out
  • Plan and prepare games for cool family fun
  • Hydrate as much as possible
  • Meat (especially meat on the bones) can be started int he oven and then finished up on the BBQ
  • Do be careful and avoid cross-contamination. Keep raw meat away from cooked foods.
  • Check that meat is fully cooked by ensuring that any juices in the meat run clear. If you have a food probe, the temperature should be 75 degrees Celsius or above.

BBQ Chicken Skewers with Corn on the Cob for a sizzling summer barbecue

Transport yourself to a tropical desert island paradise with these sticky BBQ chicken skewers. And what could be a more summery side than sweet corn on the cob?

No need for knives and forks with either of these dishes. Just grab them with both hands and dive right in!

Fish Parcels

BBQ food doesn’t have to be meaty! These delicate fish parcels are easy to cook, delicious to eat and a very healthy alternative to bangers and burgers in a bun. A sprinkle of paprika gives the fish an extra smoky flavour.

 


Place pieces of fih in foil paper for the BBQ. just add paprika, salt and pepper

 

 

Summer Salad

Citrus fruits and salad leaves go together like the sun and the sea and this is the perfect recipe for long hot days.

Romaine lettuce leaves combine with pomegranate, satsuma, and avocado in a super summer sensation. Just pick up one leave and it’s content. That’s just one mouthful, believe us.

Grilled Pineapple and Apples with Cinnamon Sugar and Cream

When the sun is hot and high, there is nothing more refreshing than juicy fruits. This dessert combines pineapples with apples and a little dollop of cream.

It also counts as part of your five a day!

Some people have asked about the pineapple corer that we used. We bought ours on Amazon. It’s great for getting the whole pineapple out without all the fuss of peeling it and then cutting out those little ‘eyes’. What is also great is that with a pineapple corer, you can use the shell of the pineapple for displaying your fruit salad. The top can be used as the lid for the pineapple of for decorating another platter with sweet foods.

It is quite easy to use. Just be sure to get a large pineapple that is ripe. The family really loved the fresh, sweet pineapple pieces that were grilled as well.

Use an apple corer that easily allows you to push the core out. Then slice the apple into thick rounds.

This is the type of apple corer we like to work with and it can be found cheaper than the regular ones which give such a struggle to remove the core.

Grill slices of apples and pineapples then dust with sugar and cinnamon. Serve inside hollow pineapple

How to make these summer BBQ ideas

BBQ Chicken Skewers

 

Ingredients

 

3 Chicken Breasts

1 Red Bell Pepper

1 Cup Smoky BBQ Sauce

1 Teaspoon Paprika

Salt and pepper



 

Method

 

Make up BBQ rub in a small bowl by mixing all ingredients.

Lay out 6 skewers horizontally.

Cut pepper into large pieces.

Cut chicken breasts into strips

Lay out chicken strips vertically. Start by placing a piece of red pepper on each skewer then thread to nearly the end of each skewer.  Thread chicken strips on. Then a piece of pepper on the end of each skewer.

Cut across the chicken to create chunks

Brush with the rub.

Leave to marinade until BBQ is ready.

BBQ the skewers while turning all the time until the meat is cooked. Do not allow to dry out.  Brush on more of the rub as needed.

 

Fish Parcels

Ingredients

6 Fish Fillets

1 Tbsp Butter

1 Tsp Salt

1 Tsp Black Pepper

1 Tsp Paprika

Method

Place fish in a large bowl. Sprinkle with salt, black pepper, and paprika. Massage onto the fish.

Cut the lemon into quarters or wedges

Grease 6 pieces of tin foil.

Place one piece of fish on a sheet of tin foil. Squeeze a bit of lemon on the fish then place the remainder of the lemon on the top of each fish. Fold the 2 shorter ends of the foil paper in and then the long ends to be folded in creating a pocket.

Place on BBQ for 8 – 10 mins.

 


 

BBQ Corn on the Cob

Ingredients

6 Corn on the Cob

1 Tbsp Butter

 

Method

Place the corn on the BBQ. Cook for a total of 8 -10 minutes turning occasionally.

Once done, serve with a knob of butter.

 

Summer Salad

Ingredients

1 Lettuce

1 large Pomegranate

1 can Satsuma

2 Avocados

1 lemon

 

Method

Prepare fruits: Peel and deseed a pomegranate. Remove lettuce leaves.

Open can of satsuma.

Remove the skin of avocado and cut into bite-size pieces.

Arrange fruits onto lettuce leaves.

Serve with or without dressing of choice.

 

Grilled Pineapple and Apples with Cinnamon Sugar and Cream

Ingredients

2 pineapples

4 apples

1 teaspoon cinnamon

1 tablespoon granulated sugar

1 lemon

Cream

Method

Peel the pineapple and cut into rounds. Remove core

Core apples then cut into rounds.

Squeeze lemon juice into a bowl with water

Immerse the apples into a mixing bowl with lemon juice and water and then place on a plate

Mix sugar with cinnamon.

Place fruit onto the grill for about 2 minutes on each side.

Sprinkle apple with cinnamon sugar.

Serve pineapple and apple slices with cream.

    And I posted this week that I was fed up of our BBQ food and needed some new recipes and here they are! Thank you girls, they look really nice. I so want to try them all especially the fish, but the salad served in lettuce leaves looks amazing too. I can’t wait until next BBQ day now 🙂
