I want to start off this week by paying homage to whoever it is who came up with the idea of meal planning. I thank you. In our household, it has saved us so much time and money. My main reason for doing this post each week is to inspire others to join the Meal Planning bandwaggon so that they too can experience the sweet results.
This week, the adults in the family were away for part of the week as we are filming for the television programme that we are currently on. However, that does not stop us from making plans and sticking to them as far as is possible so that we still continue to see the savings. We still plan our meals and cook as much as is possible and store some in the fridge and some in the freezer for later use.
The lady who looks after the children in our absence is a vegan and she loves vegetable soup (like we do) so this features a lot these days and will continue to do so as the Winter draws nearer. I don’t know about you but as much as I like cooking, I don’t like spending a really long time in the kitchen cooking. In fact, I am blessed to have a slow cooker and I do use it quite a bit. It’s quite easy to put all ingredients in for a warming soup and go back sometime after to switch it off and blend the soup using a stick blender.
Do you know anything that smells nicer than freshly made bread? Well, I suppose there are a few! Anyway, we do take pride in making our own bread (and it does not usually last long, to eat I mean). It goes well with homemade soup. In the Winter, we are far less active I think and we tend to go to bed earlier so, there is really no point in having a really heavy calorific meal close to bedtime. A bread roll or two with some warming soup is sufficient most nights.
So what have we had this week?
Easy homemade fish pie with broccoli and carrots. We usually make then in individual foil trays so that it’s easy to put away a few in the freezer for another day’s meal. See how to make them.

Beef mince with jacket potatoes, cheese, and coleslaw
Some of the meals are repeated during the week as we cook enough to serve at least twice.
We really have had some really tasty treats this week! Yum!

My mom used to do that back in Jamaica too! But it would only be a bit leftover for her lunch the next day as there were 5 kids! We love carrying on some of that even now.

I used to be into meal planning when I lived in Cali. Now that I moved in with my BF, he eats all the food that I have prepped for the rest of the week! LOL. I try to meal prep for myself and he ends up eating mine. Its not hard to make the meals itself, its the self control that happens…

Oh, you really do have a problem. My only suggestion would be to freeze your leftovers! Do let me know how it’s going.
