Getting Back on Track With Meal Planning

So we are back!

It’s been a few weeks since we actually posted our meal planning posts. Let’s just say that life (and summer) got in the way.

 

We were truly on a summer break and enjoyed eating out with friends a few times, eating party foods (there were quite a few parties), and also eating foods on the two cruises I went on.

Speaking about cruises, one of the cruise I went on took us to visit the Bahamas so I want to pause a minute to pray for the folk there who suffered loss of family members, friends and also property.  The pictures I am seeing look truly devastating and it is difficult to imagine how people are coping in these situations.

Anyway, it’s back to reality  and back on track with meal planning, and we have to take stock of what we have in, what dishes are healthy for us now (after all that feasting over the summer) and also what we haven’t had in a long time.

I’ve already checked the freezers and discovered things I didn’t even remember that we had. So those foods will come in handy. This is why I always say to check what you already have in so you can do your shopping list and meal plans around that.

Some of the most amazing meals are made when your cupboard is almost bare and you think you don’t have anything much in. See how we showed one family how to do this on the TV show Shop Smart Save Money .

We manged to find some ready made dishes that were made, cooled, packaged and frozen. These will come in handy this week, even if we all have to eat different meals on some days! That will make things interesting, don’t you think?

So here are the plans we have for meals for the coming week

Sunday: Egg fried rice, steamed veggies and fish

Monday: Lasagne

Tuesday: Jamaican Rundown with green bananas ( we recently found that Tropical Sun sells the ready made sauce so all we need is the bell pepper and a little sugar.) This recipe will be up on the blog soon.

Wednesday: Pepper pot soup  pepper pot soup: get back to meal planning

Thursday: Seasoned rice (we need to write up this recipe too.

Friday: Fakeaway oven fried chicken with spicy potato wedges

Saturday: Oxtail and beans with rice

Some of these dishes will be made in bulk so that we have a few dishes cooled and frozen for later use.
